Greetings from California

Greetings from California.

I graduated culinary school in 84, LONG before all this celebrity chef stuff. I got tired of working every Weekend and Holiday so I joined the Navy. I never stopped cooking and grilling.

About a year ago I started smoking. My first smoker was a Vertical Brinkman. I never modified it and I never learned to control it. I almost gave up smoking after that.

Every time I would go to the hardware store I would see a Texas Offset. I wanted one but could not bring my self to spend the money. One day a friend offered me a home made grill made from a 55 gal drum. Cool now I had 1/2 of the offset. All I needed was a fire box and chimney. I had a small drum that I was using for a trash can that I though would make a good firebox so I pressed one of the guys at work into service. He is handy with a welder and I am good cook..........A little bartering and well a picture is worth 1000 words.
She is not much to look at but she sure does make some good eats.

When people start making pits out of drums there is really only one way to go.
