G'day mate. Welcome. Go check out the Backwoods or Stumps smokers and clone yourself a nice cooking boxy upright model with an optional water pan. That should work. Make it with flat sheet steel. Forget them old water heater tanks.

Welcome to the forum. Water Heater tanks are very thin. Plus they have a glass lining that pops when the torch hits it.
On edit, you can save yourself a lot of trouble but still practice welding with a UDS. Are there a lot of drums available in the Outback ?
