Hey Oak..welcome. I just old native Tejas..but do got root stock running back to NC on both sides of the family tree on my Daddys end of the equation. My Mama was part Choctaw Injun borned in the Territories. Just not quite enough to get the oil money.

Well you destroying some stereotypes here. Old Dave Lineback claim every warm body in NC cook direct over hand shovled (sic) aged hickory wood burnt to coals. Whut is up here with this offset oak stuff? You aint some kinda transplanted yankee now are ya?

Well I think Gordo summed it up purty good for the Texas delegation..Oak is Oak is Oak. Now I got an old bohunk buddy from down in the Hill Country who say nothing will do cept for Live Oak split on the firewood ration quarter of a stick and placed into the fire bark down. Now who can figger out all these different Opinyawns? Now I be tending to listen to Gordo the most heavy since he a world class comp cook and the bohunk aint.  Ok..Oak is oak. Now I did get skerred a time or two with some stuff we got down here called Black Oak..Black Jack Oak...etc. It got real dark bark and a red interior..and the smoke it puts out is mighty black. I just tossed in a chunk about every 3 or 4 logs of the other stuff and everything come out ok. Coulda just been fortunant on that deal. Who knows? We speaking offset here right?

Welcome Oakenman,
I grew up partly in Charlotte, and then out in Midland. Not to far of a drive from Mathews. Actually had a high school sweet heart from Mathews. Glad to have ya here. I also love Oak. My prefered wood by far.

Guess that all depends on where in Carolina you're from. I use it all!!!
Usually a mixture of Oak, Hickory and Cherry. Also depends on what I'm cooking. Just like the difference in sauce from NC. As long as you don't associate Carolina sauce with mustard, we'll be alright.
