Ribs and chicken for 75

Doing ribs and chicken, beans, and slaw and cake. (no drinks) for 75 people

my question is the quantity of ribs... I get St. Louis cut spares (curly's) by the case...which is usually 13 or 14 racks per case...

I am thinking 2 cases will do me.. that is 1/3 rack per person (i will cut in single bones)... does that sound reasonable with the chicken back-up?.... croud will be mostly men.

I get those cases of curlys for about 60 bucks... gimme a price check also....

That's more than fair. Ok, it's fair. I wouldn't buy more.

Garry I'm really jealous of those Curley's ribs and especially at that price. If the ribs are 2.25-2.5 I think you will be fine and the price should be around $10, depends on what you have to do for the service.
