Priced a Job this weekend.. for 15 people... tell me what you would charge

Thin sliced whole Ribeye
Chicken Marsala
Garlic Mashed Potatoes
Steamed Mixed Veggies

appetizers
Hot crab dip
marinated tortillini kabobs

more or less a drop and go
 
Gary: Drop offs are easy for a small party, plus it's good PR to promote your skills. But your time and knowledge is your stock and trade. " Abe Lincoln" My min. is 25 people and every one knows that. But if I get a call from a regular customer, how can I say no. I have picked up more jobs down the road after doing a small deal it's worth it. But the customer has to know that your geared for larger gigs. I charge 3 times my cost to 50 people and 4 times my cost to 25 people. Under 25 they are charged 5 times the cost. Just my .2 cents. :)
 
this has been a good repeat client and i just got a call yesterday that the number went to 20.. so I have settled on $30 per which is $600... not quite 4X cost but for a good client I can live with that.
 
Here;s what I come up with 20 people:

Tray of chicken Marsala, = $50-$60
Tray of Rib Eye, = $225-$375
Tray of Smashed potatos = $25-$30
Tray of Steamed Veggies = $20-$25
Crab Dip/crackers = $40-$60
Tortelinni Kabobs =$ 40-$50


If you went to a resturant, and ordered a meal like that it would be about $35-$40 a plate...

Marsala is labor intenstive, ribeye cheap at $15 a pound, crab meat up here is $23 a pound, , and tortelinni kabobs are a pain to put together..

I think you did well with $600, especially if can kep your cost to under $120..
