i don't know what to charge

Some of the guys here at work love my brisket. Every time I fire up the smoker I put one on and have it sold before its done. I charge $35 for a 3-4lb flat sliced and vac sealed.
 
Charge em by the pound... I charge $8.50 a pound for brisket flats and that is sliced and foodsaver packed.

Yeah, yeah, I know.. I am practically giving it away.. but i usually get flats at around 2.49/lb and do a whole case at a time.

You would not be out of line to charge $9.50 or more a pound for brisket.
