At least 10 per person....good chance folks will line up at the ribs
pan and not touch the brats.....if you are expected to feed
ribs for a certain amount of people, I'd dang sure get my money there.
 
This is whut I have been taught to call a custom meat cook. Figger up the raw weight and add two bucks a pound for whutever passes through your pit and emerges cooked or heated up on the far side. That should work.
