24 shrimp
1/2 can coconut milk
1-2tsp curry (depending on how much you like it) mine was a very light colored one.
1/2 pkg spaghetti cooked
2 red peppers sliced thin
2 carrots sliced thin
1/2 onion sliced thin
flat leaf parsley chopped
4 cloves garlic
2 tbsp evoo
sautee the garlic in the EVOO until nice and brown remove & discard. Add onions and carrots sautee lightly add red peppers. Add coconut milk and curry bring to a simmer and add shrimp serve over hot noodles. sprinkle with parsley
The next day if you have leftovers mix them all (including the noodles) into a package of MISO soup. Makes a good soup.
