Hello All, Today is the third time smoking turkey drumsticks. Same problem. Brined, smoker set to 225, recipe says go to 140 IT then raise temp to 274 to IT of 165, to glaze maple syrup/butter mop, total cook time 4 hours.....the problem? After two hours, a bit less, the IT is 168! Remote temp unit is double checked with other probe, confirms. I took the smoker temp down and the IT is down. Its just getting too hot too fast. Ideas please.

FYI, The smoker is a Yoder pellet smoker and holds temps very well.
