I made a really good brisket a while back with a rub that had a little kick to it, not too too much, but a good amount that was noticeable. I think the recipe was for pulled pork but I used it on brisket and it turned out great? I know this may be a long show but anyone know a good recipe like this? Thanks

Try This.

Essence (Emeril's Essence)

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly.
Makes 3/4 Cup

Emeril's Rustic Rub

8 tablespoons paprika
6 tablespoons salt
6 tablespoons garlic powder
5 tablespoons freshly ground black pepper
3 tablespoons onion powder
3 tablespoons cayenne
2 1/2 tablespoons dried oregano
2 1/2 tablespoons dried thyme

Combine all ingredients and store in an air-tight container
Makes 2.25 Cups

Emeril's Southwest Seasoning

2 tablespoons chili powder
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon black pepper
1 tablespoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon garlic powder
1 teaspoon crushed red pepper

Combine all ingredients thoroughly. Yield: 1/2 cup

I'm not sure if I should be letting this secret loose on the internet, but try adding some cayenne to any generic rub recipe. I'm no expert, but my neighboor swears by this! If all else fails, try Pigs' version.

The TVWBB [urlhttp://www.virtualweberbullet.com/pork2.html][/url] Renowned Mr. Brown Recipe has a nice kick to it.

Southern Succor Rub
--------------------------------------------------------------------------------

1/4 cup ground black pepper
1/4 cup paprika
1/4 cup Turbinado sugar
2 Tablespoons table salt
2 teaspoons dry mustard
1 teaspoon cayenne pepper
Mix ingredients thoroughly. Makes enough rub for one pork butt, with some leftover for use in the Southern Sop.
