Darn it. Tim sent me the recipe, now I can't find it. Chicken leg 1/4's are on sale this week. I'd like to make a batch or five. We love the stuff. If anyone has the recipe, please send it my way.

Guess I'm just a idiot. Found it.

Oompappy's Chicken Parmesan Sausage

Per Pound of coarse ground de-boned chicken
thighs with the skin. Add...

1/2 TB Kosher Salt
2 TB Grated Parmesan
1 1/2 TB Sun Dried Tomato, chopped (the bag kind)
1/2 tsp Granulated Garlic
1/4 tsp Black Pepper
1/4 tsp Basil
1/4 tsp Oregano
1/4 tsp Crushed Red Pepper (+)
1 TB White Table Wine (ice cold)

Mix all ingredients with the coarse ground meat
and grind again on medium. Stuff into natural
casings.
