What to do with Leftovers?

I love making dinner with leftovers, sometimes more than making a meal from scratch.

I took some chicken from Sundayand chunked it up with some bell pepper and onion and let it simmer in Swamp Sauce (one of my favorite and extremely versatile BBQ sauces) and served over rice. Very good, very quick weeknight dinner!

Great advertisement huh Tim!?!? Should I wait by the mailbox now? Or should I just place my order?

Seriously, this sauce if very versitile.....not often do you find a sauce that is great on puled pork that is just as good on ALOT of stuff.

Reminds me of that Cajun named Bodrow of course..who come to Foat Wuth and tried to disguise himself as a cowboy. Well Budrow ordered a chesseburger at the Dairy Queen. The lady say, "You want everything on the cheeseburger?" The cajun say, "Hell no..cut the rice." "You think I am some kinda cajun or something?"
