I saw two packs of tri tips the other day at Sams Club and got me to thinking of doing a little experiment. Cooking one the way I usually do and then salting the other one. Today was the day.

Salted one tri tip for an hour and left the other one alone other than taking it out of the fridge and letting it come to room temp.Just before going on the grill on seasoned the other one using Suzie Q Santa Maria seasoning and just added some black pepper to the salted one. The one I salted was a lot redder but that always happens when I salt steaks so no surprise there. You really can't see it much in the pic but the salted one looks a lot more appetizing after being salted. Salted one on the left.

My new favorite way is to also cook them on the rotisserie. Salted one on the left.

Sometime during my experiment my Wife told ,me she bought some marinated carne asada the other day that needed to be cooked too.

Tri tips sliced. Salted on the left and carne asada toward the top.

My sammie. Slice tri tip on some flat bread.

Some provolone melted on top.

The results..... my family and I like the salted one alot better my next door neighbor liked my usual way. The salted one had more flavor and was a tad more tender. The tenderness might have come from it being a little bigger and not as cooked as the tried and true tri tip method though. Any-who from now on I'm salting my tri tips before I cook them.
 
Buzz, I think adding the Suzie Q after salting would make it too salty.

The salted one did not have more fat on it , it just looks like it because after salting it made the meat redder. If you look at them cooked they look about the same and yes the salted one was juicier.
