Well I was raised on round steak and aint never bumped into one which was chewable without being severely abused around the haid and shoulders area by being pounded unmercifully with the sharp edge of a huge Old Hickory butcher knife. This even apply to folks with a mouthfull of teeth. Now this do not apply to wet cooked stuff..like Swiss Steak..Carne Guisada etc. It can get real edible thataway too..but will testify it aint near as tasty as chuck cooked in a similar fashion.

I have never seen a top round steak cut like that. Are you sure it wasn't a petite top sirloin??? Whatever it is, sure does look yummy :D
