Stuffed with Hatch Chiles, bacon and onions then served with some Salsa Verde.
First I fire roasted some Jalapenos, serranos and tomatillos with my weed burner on the grill.
Then made some salsa verde
Cooked some bacon then crumbled, sauteed some onions in bacon grease then added some hatch chiles for a stuffing. Also added some fresh cilantro
Then tied it up and rubbed it with some Head Country Seasoning.
Added some Salsa Verde when loin was 135* and pulled it when it hit 145*. I think this looks disgusting, nothing like I pictured it in my head.
Rested and sliced.
Plated. Added some salsa to the plate,added cheese then I melted it. Served with some refried beans and corn tortillas. I need to keep this one in my memory bank its a keeper.
