Stuffed chops amateur night.......

I picked up some nice 1.5" thick bone-in chops today.

I sliced pockets, added a coating of olive oil and BBQ rub both inside and out, and the meat will rest until dinner.

Nothing fancy here folks.....LOL I plan to use stove top stuffing as the filler. I plan to over-stuff and leave stuffing hanging out of the chops while grilling and we'll see what happens.
 
Looking good. I over stuff mine too, learned to use the grill basket as the stuffing has a habit of falling threw the grate into the coals.
Nothing wrong with stove top, I like the stuff.
 
OMG....would you believe I nearly squeezed an entire box of stuffing into 2 chops??? Bwahahahaha.......
