Well, I got sort of late start cooking my dinner. Only one home for a few days! ;D ;D I cut the grass in the yard this afternoon and when done I was whupped!
While waiting for the potatos to cook(I'd swear that the Keg is smiling back at me), I'm having a few brewskies.

That boudin in the other picture made for an excellent appetizer!
I'll tell y'all up front here. I'm afraid to go to sleep tonight! I just had the absolute best steak that I'm thinking it was my last meal. It was that good!!!

You know me. I've got to have a nice compound butter on my steak!

I went and forgot to put the mushrooms on my potato I had simmered but it was still fantastic.

Looks good. Sorry to see the Cajones being forced into drinking Mexican beer. Hope Justeen aint spinning in his grave over that.

For my compound butter I use the following:

1 stick sweet cream unsalted butter
2 TBSP finely chopped fresh basil leaves (1 TBSP dry crushed basil leaves)
1 1/2 tsp Kosher, or Sea Salt (you can use anything, BUT table salt)
1 tsp garlic minced garlic (or 1/2 tsp garlic powder)
1/2 tsp onion powder

Put room temp stick of butter in to mixer with paddle, for 5 minutes on low-low medium.
This will whip the better by adding air into it.
Once butter has been whipped add all ingredients into mixer.
Again place on low, until all ingredients are incorporated well in into butter.
While waiting for butter to complete, get a couple pieces of wax paper, or parchment paper cut.
Take butter from bowl, and deposit it unto the wax paper, roll into a log slightly bigger than a quarter.
Wrap parchment into foil, place into freezer for about an hour to firm up.
After chilled remove foil cut butter log into 1/2" tabs. Place on top of finished steak.
After use of butter wrap in plastic wrap and place in refrigerator.
I have kept up to 6 months. Flavor does get more pronounced, the longer it sits.

Thanks agin! I'm pretty sure this was a rack of Prime NY Stip I had gotten for Costco a few months back and cut into steaks myself.
