Do look tasty. Neva heard of that Tomahawk descriptive adjective either..but it do sorta look like one.

Is that so to give it a handle to hold it so you can eat it like finger food? Whut becomes of the missing meat..fat etc which is removed to form the handle? Thanks.

Ok gotcha. Yep believe that area would be mostly fat come to thunk on it. Thanks. My favorite strategy is to have em bone it plumb on out and slice the meat into boneless steaks and leave the ribs intact as a rack to cook another day. Sure do make some fine beef ribs in the higher grades. Suspect Select be at least as tough as the steak.
