I cooked the maine lobster tails for a few minutes on the gasser (after steaming the whole bugs to death and inserting bamboo skewers end to end to keep them straight) Remove the tail meat whole, slice and plate over sauce. Drizzle with more sauce.
Champagne sauce recipe is from Weber's Big Book of Grilling. I'll put a variation in the recipe section.
