Decided to do a Santa Maria Style BBQ for Memorial Day/Smoke Day along with some chicken. Chicken cooked indirect with some SBR and cut with Worcestershire sauce. Tri tips done with some Suzie Q seasoning and a chunk of red oak for smoke and cooked to med with a reverse sear at the end. Pinquito beans were done on the stove I just put them on the grill to try and get a little smoke flavor to them.

Santa Maria Style Salsa

Yields 3 1/2 cups
3 medium fresh tomatoes, chopped
1/2 cup finely chopped celery
1/2 cup chopped green onions
1/2 cup finely chopped California green chiles
2 tbsp. snipped cilantro
1tbs. vinegar
Dash of Worcestershire sauce
Pinch of garlic salt
Pinch of dried oregano, crushed
Few drops of hot pepper sauce
Directions:
Combine all ingredients in a bowl. Cover and let stand for one hour to blend flavors.
 
V9 any advice to a novice on doing a Santa Maria Style BBQ of some Tri Tip. I'm headed north to work on a project at our cottage and will be feeding a few folks and would like to give it a try. I have some red oak, can get the Tri Tip and have the desire, I'm not sure about getting Pinquito Beans, but would appreciate any advice. I assume I can use my Performer as at this point the better half would frown on me buying a cowboy grill :D
 
I followed these recipes for the most part. http://lospadrescounty.net/et/smbbq.html You probably won't find pinquito beans unless you order them online. Any pink bean will do or even pinto beans. I used my Performer too. I seem to have the best results when I cook the tri tip indirect with the dome thermo reading between 275-300*F and cook the tri tip till around 115-120*F internal. Remove the tri tip, don't foil it or anything and then get the Performer hot and do a reverse sear till medium rare.
