Saw this entree in a weekly grocery flyer and decided to try and make my own.

Made a filling of cream cheese, spinach, dill, capers and a little Cajun seasoning and put it on a couple of puff pastries that I had rolled out enough to cover the salmon.

salmon fillet seasoned with a little more Cajun Seasoning. Egg wash all around the edges to help seal the pastry.

Plated with all of the above and some white rice with butter and soy sauce. Salmon was a tad overcooked but I was very pleased with my effort. Going to make this again for sure!!

Ok..since having some time to consider this scenario..thinking a person might wrap a piece of toast around some spinach salad and a hunk o salmon. Now is this wrong? This be the wild thang. Friends do let let their pals eat tame Salmon. Know thats right since it has been seen in print somewhere or other. Not sure why yall want to make me take extry heart pills.
