Roadside Cornish Hens

Split 3 cornish hens in half and marinated in roadside marinade overnight and made another batch to baste every 5 minutes or so. Cooked at 350* direct.

Chicken with fingerling potatoes tossed in some evoo and salt.

About 5 more minutes and the chicken was done.

I have only made this a few times and this was the best yet. Chicken was very moist and tender.
 
Iced tea. Trying to break a bad habit that is starting to develop. I open a beer or 3 every time I fire up the grill and I grill a lot.

It was the best roadside chicken I have made but I marinated the chicken a lot longer than I have in the past too.
