Roadside Chickenis a family favorite! Had it along with grilled corn and leftover broccoli slaw and pasta salad!

Witt told me that its Chicken marinaded in Chivettas, BBQed & sold along the side of the road, Kinda like a roadside veggie stand only selling BBQ.
He also said that up in his area they tend to blacken or crisp up the skin some, mmmmmmm

Cliff or Dave or someone sent me some Chiavettas, but I like
the recipe from this board better...I made some yesterday but
added a t of dry mustard and a t of tumeric (by accident).
I stilll prefer the original, but there's one more flavor, a fullness,
I'm searching for. I use less oil too....I like the vinegar spice
combo to be STRONG

BTW Wolfe man what is the acidity of the origanal Chivettas ?
My taste buds say its higher than plain old Heinze white brew.
(you did know vinagars have different acid ratios... Huh?)
I think they use a special brew high acid vinagar in the Chivettas
As the bottle say " marinade meat items for 30 min." And "No MSG"
Dave witty Dog Told me " Max about 6 hours"
Don't take my word take a taste of Chivettas Then a taste of white vinagar
Its good for yer gizzard too :eek: :partyman:

I don't know the acidic levels and have only had Chivettas once (Thanks Witt) and don't recall it being as vinegary as the RSC recipe. But......I use Apple Cider Vinegar when I make RSC, it has a much better flavor in my opinion than the white vinegar. I also use less oil like Jim.

Just a warning to any that is going to make RSC, make sure you have a spot on your grill that does not have charcoal on it, you will need it because you will get alot of flare ups. The WSM works great for this without a waterpan, you want the flavor of the marinade hitting the coals.
