You all have probably already seen Vermin's post on chicken taquitos. I decided I would try to replicate it using some pulled pork. I also used his recipe for green chile sauce. It's great stuff.
I modified the filling inside the taquitos a bit. For mine, I chopped up three large green onions and added about 1/3 cup of Vermin's green chile sauce, 1/3 cup of my home made Mango BBQ sauce and 3/4 cup of shredded Jack cheese. Mixed it all up with the pulled pork. Just added enough so it looked like there was a healthy mix of meat compared to the mix.
Followed Vermin's recipe for his chicken taquito post the rest of the way.
Here's the taquitos crisping up on the grill.
Plated taquitos. They had a nice rich taste due to the addition of the Mango BBQ sauce. Yum, Yum!
