Made some Pulled pork last night and used some of it to make some enchiladas for tonight's dinner.
Pulled pork swimming in some enchilada sauce
Heated some tortillas and stuffed them with some on the pork and topped them all off with the remaining sauce.
Topped with cheese
On the grill for 30 minutes covered and another 15 minutes uncovered
Topped with sour cream, lettuce, tomato, and Sriracha sauce
