I've been really busy lately and we had a late lunch. I decided on a light dinner. The local fish guy had some good looking scallops. To get an idea of the size, these six scallops weighed in at .9 pounds. So I wrapped them in prosciutto, hit 'em with a moderate amount of Wolfe Rub, and put 'em on the gasser. The peas are local Matanuska Valley peas. The long days make 'em sweet.

Those look great Griff! It's 5am and I wish the grocery store was open so I could go get some scallops and prosciutto, so I could cook that for breakfast!!!

those look awesome. Weber's weekly e-mail about a month ago sent a prosciutto wrapped scallops with a reduced balsamic vinegar glaze......good eatin, scallops were like butter =P~
