I finished the weekend off with grilled sirloin, potatoes and cotb.
My wifes steak was seasoned with S&P, daughters with Wolfe Rub Original and mine with DP Raising the Steaks. I did the naked sear, then season method. First time I've done that and I'll be doing it again, I LIKE it!!

Still not getting rid of them yet, at least not until I get another Primo! I still need the capability to do bigger cooks. But if anyone is interested I am considering selling my Performer and 18" kettle soon. The catch is you would have to come pick them up.

What is this method that Cappy invented ? I don't want to be left out. :D

Sear the room temp meat under a screaming fire, flip and season. Then when you plate, season the other side. I really like it, it prevents the rub from scortching.
