Steaks, potatoes, salad & Cuban garlic bread tonight.


Steaks rubbed with Olde Thompson Steak & Burger Seasoning and twice baked potatoes ready for the gasser.

Great meal here on the west coast of Florida...and I was informed by my father (who follows all of our cooks as closely as I do) that my post from last night was inaccurate. We aren't in Coral Gables, we're in Cape Coral...Stupid beers ;)

Great job with the meat & potatoes Don. I've seen a couple of twice baked potato posts now on here and I'm going to have to try them out. What did you use for seasonings when you mashed up the potatoes and put them back in the shells?

Bake the potatoes in the oven or on the grill for an hour at 450ish. Use one more potato than you want to serve. Let cool enough to handle.

I minced a little yellow onion very, very fine (grating them would work too) then sweated them in a some butter. Added cream and a minced garlic clove to the butter mixture and let everything steep for a while.

Cut one potato in half and scoop out all the "meat". Lay the other potatoes out on a cutting board to see which way they lay the best. Rotate 90 degrees and cut the top 1/4 off. Scoop out all the "meat", leaving about a 1/4" in the shells. Add cheese (I used American for this but any you like will do), S&P, sour cream and enough of the hot cream/butter mixture to get the consistency of mashed potatoes and mash with a potato masher or large fork. Scoop the mashed potatoes back into the shells and lay a slice of cheese on top. Refridge until ready. Put them on a very hot grill, indirect until they are hot and the top cheese melts, 15-30 minutes depending.
 
uuummmmmm! Wheres the pitcher of beer? hahaha! Don! if you don't mind shipping UPS overnight i'll take 1 steak , 14 potatoes, 80 muffin rolls, throw in a bottle of that wine for the wife and a bunch of great grill marks, 16 of the invisible beers for me, and a head of lettuce for the salad. Don't forget the wooden bowls and 2 of the orange plates! Looks fan friggin tastic. oh and 800 signs or more. nice job. db
 
Your wife's plate looks mighty amazing. That's the kind of low carb diet I can get behind!
