Today around 3pm I fired up my new toy, my Chaney Grill that my wife bought me for my birthday. Anyway, My wife picked up a rack of spares and a rack of baby backs, I trimmed the spares then seasoned with lemon pepper. The baby backs were sprinkled with Pappy’s. Once on the grill, I squeezed fresh lemon and orange juice from our trees on the spares and I basted the baby backs with hopped up Sweet Baby Ray’s. For a little smokey flavor I added a hunk of pecan wood. I cooked up the trimmings from the spares, diced em and tossed em in with some baked beans and cooked in em my cast iron skillet. I foiled the ribs at the end and tossed em back on the grill, both came out very tender, my wife loved the spares and so did my son. I ate everything as well as a ton of beans...I guess I’ll need to dutch oven my wife tonight Anyway, I LOVE this grill and thanks to Tri-Tip and Smokey Lew for all the insight/tips and inspiring me to purchase this gill. I’m One Happy Camper!
