Looking good. Thanks for the salt tip. I got in trouble with some of he Cajun Seasonings on spares a few times. Think I used Tonys but you can pretend its salt when it come time to apply. Hey Max try the quick hot water movie star brine in the recipe section sometime. It keeps the chops from turning into hockey pucks and gets the flavor all the way through. You might could even use the Cajun spice for the salt ration..there ya go.

Hockey Pucks? These were moist as hell.... Think you have gotten the chops being caramelized from the bbq sauce mixed up with it being burnt.
