1 rack of untrimmed spares seasoned with salt, pepper and granulated garlic, grilled with Royal Oak lump and 2 chunks of cherry indirect around 350º for 2.5 hours, then cooked for 30 minutes over direct heat flipping often. We also had grilled green tomato that was marinated in zesty Italian dress, salt, pepper and garlic and fried okra and Sponge Bob Mac N Cheese! :shock: PDG dinner!

Well I have tried quick cooked spares a few times and there is some drawbacks..such as quite a bit of un rendered fat and the meat climbs the bone balls up and makes a tough knot..which makes the end bones stick out as in the photo. I would not do them like that less forced into it. Now got no compunctions about doing them direct just like to be a lot further away from the fire. Nice looking bones.

You outta give them a try again, cause these were rendered good and knotless!
 
Well I have known one comp cook who tried to grill his ribs but didn't neva see him making any trips to the front on it. Now he had a good chicken and saw him walk a bunch of times in that category. He had one of them high dollar Cajun Grills. Still got it I suppose. If that's the way you like spare ribs by all means continueth:) Now I could live with the strategy on high quality beef ribs.

Well praise the Lord on the family not being KCBS Judges. I wouldn't want to inflict that curse on anybody:) Could you imagine having to eat bbq cooked by *ankees on a regular basis? Gag..heave..sputter. They prob make you eat the wet lettuce and artificial Ivy in the turn in box too. :shock:
