One of our favorite quick dishes is grilled Mahi-Mahi with wild rice. The fish is seasoned with olive oil and lemon pepper and then grilled over direct flame. The wild rice is a garden blend that take about 40 minutes in a heavy cast iron pan. Add steamed broccoli with butter, salt, pepper and a squeeze of lemon juice and it's ready to go.
