Actually ham and eggs in Salsa Verde sauce.
Fire roasted some veggies for the sauce. I only used one of the jalapenos and had around 10 Hatch chilies already fire roasted. Also added some salt and cilatro to what is roasted on the grill to make the sauce. Made a bunch of ABTs too.
Sliced up some ham and cooked it a bit in a CI skillet
Removed about half of the ham, added the salsa verde, and poached a couple of eggs in the sauce.
Added some shredded cheese, warmed up a couple of corn tortillas and had breakfast for dinner.
