Green Eggs and Ham

Felt like breakfast tonight, so I made one of my favorites, scrambled eggs in Salsa Verde and ham.

Ham steak on the grill

Cubed up about a 1/3 of the ham and sauteed some red onion

Added a couple of scrambled eggs to the pan and when they were almost set added some salsa verde sauce.

Everything warmed through and ready for a plate.

Warmed up a couple of corn tortillas

Plated. Added a little Mexican cheese blend and ready to dig in!!! Still have ham left so I know what for breakfast tomorrow!!

From one of my wife's comedy shows she likes to watch the word for breakfast for dinner is "brinner". When I ask the kids for ideas for the weekly dinner menu "brinner" comes up about every other week. Now I have a new way to make brinner! Thanks V!

Fine job Sir. Could we add the sauce at the table? I had to clean up something similar looking to that just this morning when Senor el Gato had a queasy tum tum eruption on the kitchen counter. It was even the same color with chunks. Thanks.
