I gotta keep my strenght up for the big game. You know, the one where LSU destroys Georgia!!!
So I started with a strawberry wine thyme sauce. Reduced the wine with thyme, shallots, garlic, and rosemary before adding veal stock and reducing again so it was nice and tastey! Finished Monte' au beurre.
Whipped up some seasoned butter beans and some spinach and feta cheese. And, some greek seasoned poke chops from the Primo.
Next up. Porterhouse and a sympathy phone call to my Georgia buddies.
