This is the second time I cooked these Flat Irons and absolutely LOVE THEM!!!

I am going to have to modify my Smokey Joe because even with a full load of lit lump, I cannot get the damn thing hot!

Good looking steaks!! What are your plans for modifying the Smokey Joe?

Going to drill a couple holes in the bottom and add a vent. That should give it the airflow it needs!

how big?

3/4"-1" should be sufficient. I'm gonna use one of the Weber vent covers so I can control the flow.
