My wife picked up an Asian cookbook off the clearance rack the other day and this looked great. It's a low calorie version of Peking Duck. After a quick trip to the supermarket, I came home with boneless, skinless chicken thighs instead of the duck. Thighs were $2 per pound and the duck was $10 per pound! I'll post the recipe later, right now it's time to watch "The Dark Knight"!

Start with a tortilla (pancake) with some chicken.
Add some scallions, cukes, carrots and some sauce.
Roll it all up and dinner is served.
Actually, this was the forth one I ate tonight as you can tell by the mess on my plate. I almost didn't take any pictures because I was too damn lazy, but my daughter came to the rescue!
