That is what I am calling this dish
A couple of diced carrots simmered in a little water
When water evaporates add 2 TBS oil and a lb of coleslaw mix and saute
After a couple of minutes add a lb of diced corned beef and cook until some of the corned beef is warmed through and cabbage is sauteed down.
Add to a casserole dish or CI skillet.
Add some swiss cheese
and top with mashed potatoes. Cook in grill or oven about 375-400 degrees for 35 minutes.
Let cool 10 minutes and top with Slawsa.
