It was Friday night and that means it's 'Steak Night' at least for my wife. Cathryn and I had other ideas and wanted chicken fingers. After we found out at the store, that chickens don't have fingers, I told her we could get some boneless breast and make some, she said 'that's a good idea daddy'.
Started off with some potatoes, corn, onion and asparagus. I wish I had seen Lampe's Parm and Lemon Asparagus before, cause I would have had that!
Dipped the chicken in an egg wash, then into yellow corn meal, highly seasoned. Cooked indirect until golden brown.
My wife seasoned her steak with pepper, salt and garlic.
These turned out awesome, super moist. I've done this many times with wings and will now be doing it more often with BSC breasts!
