We're getting on a plane and heading down to Ft. Myers, FL. tomorrow to spend a week watching some Red Sox Spring Training games. Had to get rid of some stuff from the fridge tonight.


A pack of wings seasoned with some leftover Cornell seasoning (poultry seasoning, salt & pepper), a grated russet potato (eyes removed) with a minced red jalapeno and minced onion and a compound butter made with basil and mint that was on the verge of hitting the compost pile.

Dry wings on, small CI skillet getting as hot as possible.

After 15 minutes basted the wings with the compound butter and added the potato mixture to the skillet.

Basted the wings every 10 minutes with the butter until done. (no pics)


Everything off. Made a fruit salad with some oranges and grapes that wouldn't last through the week and toasted up some 2 day old bread brushed with the compound butter.

Looks great, Don! You and those dang potato cakes! :evil: I've got to get me a small CI pan and give that a try. That looks so good! I can hear the crunch
through the pix!

Good job on the cooking. I am praying that God will send His Angels to make sure the wing stays in place on the airplane..that the air trafficker bumper into preventer do not have a bad hangover and let you clash with a piper cub etc. Know you will have a safe trip.
