We've done this one before with a whole chicken but it was just the 3 of us tonight so we just did a couple of breasts. Always good...
Chipotle-Lime Chicken from Claire Robinson

On for about an hour at 400ish.
While the chicken was cooling enough to be pulled we made some corn tortilla chips and warmed the flour tortillas.
Corn chips bubbling away.
Plated with some Mexican Red Rice from Ingrid Hoffmann
and some store bought 5 layer dip from Trader Joes.
Really good! One of the best meals we've had this Summer.
