Chicken Muffins

I made a couple of Cornell chickens for Saturday nights dinner and had a whole chicken leftover.

Was looking online or some leftover chicken ideas and found a recipe for Chicken Muffins. So I tweaked the recipe to our tastes and decided to give it a try on the grill.

Made a mixture of chicken, celery, salsa verde and some shredded cheese and filled a muffin tin.

When the chicken mixture started getting brown around the edges I added a little more cheese on top then removed them when the cheese ad melted.

My plate. Added some sour cream, more salsa verde and cheese.
