Real simple dinner tonight.

Chicken thighs seasoned with some Chef Merito seasoning and cooked to 150*F with a chunk of hickory for smoke.

Store bought mole sauce. Added a little water to cut it a bit so I could finish cooking the chicken and let the sauce simmer a bit to thicken up.

My plate, white rice, pinto beans, chicken and topped with the mole sauce. Real simple and really good!!

Great looking vittles as usual. Never did around to trying the mole sauce. Guess I have to do that one day. Thanks for the pics.
 
V, I had chicken Mole in Ensinada the night I proposed to my wife. It will always have a special place in my heart!
