Made some chicken fajitas last night on the kettle. Used 2 chicken breasts and marinated them in sour orange juice. I've never used that marinade before but it was really good. I went to La Michoacana meat market and got some goodies. They had the sour orange marinade and something I've been looking for for quite sometime and that is red fajita seasoning. This stuff is awesome and has a great smokey flavor. Also picked up a bag of mesquite lump charcoal which is awesome as well. Seasoned the breasts up and threw them on the kettle with k and mesquite lump and grilled them up. While I was doing that I caramalized some onions in butter and evoo. Sliced up the breasts and put the onions on top and man o man it was juicy and delicious. I really really love that seasoning if you are near one of these markets pick it up. Didn't use hot sauce because I wanted to taste the seasoning. Thanks to surfinsapo for the idea it was a good one. I need to get me some skirt steak and try it out this weekend!
