Chicken Enchillada Casserole

Chicken thighs on the grill. No seasoning, no trimming.


Thighs shredded


Corn tortillas dipped in some store bought red enchilada sauce, some onion, half the chicken in sauce too with a little cheese.


Another layer of the above then one more layer of tortillas and topped with a lot of Mexican cheese blend.


Cooked on the grill covered for a half hour then removed the foil


Then cooked for another 15 minutes uncovered. No plated pics, dinner is not for another couple of hours. We will reheat it and top it with lettuce, tomato, sour cream and hot sauce.
 
Sorta reminds of one of my favorite healthy eating place which makes a very good Sunny CA baja beach food chicken salad. They grill the chicken and pile rice beans and hundred other items of your choosing on top..along with lettuce and tomaters. Served in an inedible flour tort. Now I'm hungry again..lol.
