Used some smoked Chicken quarters I smoked earlier in the day.
Chopped up some of the chicken and added a 28 oz can of Las Palmas red enchilada sauce.
Dipped some corn tortillas in the sauce added some of the chicken inside the tortilla and placed in a pan. Once the pan was full I dumped what was left over the tortillas and placed the pan covered with aluminum foil on the WSM to let everything warm through.
Once warm I took the aluminum foil off
and added cheese. Took the pan off when the cheese was nice and melted.
Some refried beans
Plated. Added some sour cream, lettuce, tomato and Sriracha sauce to the enchiladas.
