No sandwiches tonight!
Grilled a couple BSCB on the grill seasoned with salt and pepper
Diced a small onion and sauteed in a little canola oil.
Thawed out a pack of Hatch Chiles, cleaned them and chopped them up put them in the pot along with the chicken and a can of green enchilada sauce.
Let it simmer for about an hour and shredded up the chicken
Warmed up a few large flout tortillas
Added the chicken, sour cream and Cotija cheese.
Served with refried beans that I added a little bit of Hatch chilies too. Was a sloppy burrito but it sure was good!
