The plan for dinner was chicken Caesar salads. Well, I had some leftover crab stuffing from lunch
so I thought I'd try to turn it into a crab cake and make the salad a side..at least for me.
Glad I did. It was awesome!
Chicken cutlets marinated in a fennel, lemon juice marinade and the leftover crab mixture pattied up, dipped in egg wash and coated with panko. My favorite CI skillet with a little canola oil.

This was one of the best meals we've had in a long time. Beautiful day here in central Virginia too. Life is good!
