Chicken and Ribs
Fired up the Santa Maria grill with some red oak and grilled up a rack of beef ribs, some marinaded chili lime cilantro chicken and grilled up some corn.
Plated with some leftover spinach from last night.

Looks very tasty Vermin. Is it a big difference cooking on the Santa Maria vs a regular type grill as far as temp control? Do you try to indirect at all on that or just direct?

Creamed spinach recipe
2 packages frozen chopped spinach
approx half a cup heavy cream
half a package of creamed cheese
about a cup of cheap parm cheese
Heat through until everything mixes together then simmer until spinach mixture thickens.
