Cedar Planked Salmon with Pesto

My teammate Crystal met a couple of folks who
are putting together a hardcover cookbook of their
friends cooking....they asked if I would do something
for it.

I decided to do a salmon with an onion crust. Not a lot
of good shots of the finished product, there were 6 people
milling around, but I got these shots....they loved the salmon.

First I put s and p and lemon juice on the salmon...covered
with pesto (next time I'll use more), then topped with Frenchs
onion rings that I had lightly crushed.

20 minutes on a hot grill, and it came out great.















 
Looks and sounds good!! Cool idea, I like salmon but can't ever think of anything creative to do with it.
 
The first way I did it was instead of pesto, adding a layer
of really good honey dijon, then the crushed onions, the topped
a lemon-wine sauce....got 2 3rd places in Ab's with that, but since I suck
at sauces, I decided to go this route and liked it better.
 
buddy that was store bought. I love the stuff but hate making
it, and I found a real good brand at Costco that I'll never
beat.
 
Looks like I'm going to be making a trip to Costco this week! Thanks! BTW, Costco around here always has some real good salmon, nice size pieces at reasonable prices!
 
Just be careful. Costco carries wild salmon sometimes, and farmed sometimes. The color is usually a give away, but those fish farmers have started adding dye to the feed.
